Sigma produces and sells ham, sausages, bologna, and bacon among other products. Our brands are widely known among the consumers, since they are focused on satisfying the needs in each segment of the market selected. Some of them have more than 70 years of tradition.
8 sheets of lasagna
8 slices of ham
2 ½ cups of cottage cheese
1 package fresh spinach
1 cup shredded gouda cheese
Water and salt to boil the pasta
Salt and Pepper to taste
Set the oven in 375ªF. Boil the fresh spinach leaves with a little water and salt until they reduce. Take them out of the water and dry with a towel. Once they are dry, cut into small pieces, mix very well with cottage cheese and add salt and pepper to taste. Cover the bottom of pan with tomato sauce. Cut the ham in slices similar to the lasagna sheets. Spread a bit of the cottage cheese and spinach on the pasta and top with a slice of ham. Carefully roll the pasta until if forms a small roll; place on mold and cover with more tomato sauce. Spread with shredded gouda cheese and cover with aluminum paper. Place in previously heated oven during 30 minutes, remove the aluminum paper and bake for 15 more minutes so the cheese melts and the pasta browns.

250 g panela cheese
1/2 stick margarine
200 g cream
5 poblano peppers grilled
1 finely chopped onion
1/2 teaspoon salt
1/2 teaspoon oregano
5 epazote leaves finely chopped
4 cups tomato sauce seasoned
Peel the poblano peppers, remove seeds and cut into slices. Fry the onions with the margarine, when they are soft and clear add the pepper slices, salt, oregano and epazote: let cook for three minutes. Add tomato sauce and let boil for five minutes. Serve pepper slices and spread with panela cheese as well as cream. Serve with refried beans and hot tortillas
Sigma started in the yogurt market in Mexico in 1994, through a franchise agreement with Sodima Internacional, French company owner of the "Yoplait" brand. We manufacture yogurt products in a great assortment of flavors and presentations such as yogurt with fruit and natural, drinkable yogurt, among others.
Complementing the dairy product line. Sigma added other product categories to its product portfolio such as: cream, margarine, and butter.
250 g double cream cheese
200 g cream
2 tablespoons finely chopped onions
2 tablespoons finely chopped fresh epazote
1/2 teaspoon salt
Whip the double cream cheese and cream until it has a homogeneous mix. Incorporate the finely chopped onion and epazote. Pour in a container and place in the center of a dish, served with toasted tortillas for tasting.
